Wardika farms coffee in Galungan Village, Lemukih, a quiet highland area in Bali close to HEQA's coffee processing facility. His Robusta Huni trees grow at around 950 meters above sea level, shaded by hills and forest trees.
Together with HEQA, they work closely with Wardika to source fresh cherries directly from his farm, just an hour away from our processing facility in Buleleng in the northern part of Bali. This proximity means cherries are delivered at peak freshness, ready to be processed with our post harvest processing protocol.
At HEQA's Bali-based production station, research, processing, and milling work in harmony to unlock the best flavor qualities of Indonesian coffee. Through precise, controlled fermentations, we explore the endless potential of microorganisms to elevate coffee—creatively, consistently, and sustainably—for both the natural environment and the producers we partner with.
They chose Bali as their first base because its coffee stands apart in Indonesia, shaped by a unique mix of history, culture, and flavor. With strong infrastructure and an openness to innovation, it’s the perfect place to push boundaries and redefine what Indonesian coffee can be.
The coffees are carefully fermented with air exposure for 90h. The condition of the cherry is carefully monitored for the entire duration of the fermentation. Then the coffees are harvested and immediately pulped to stop the fermentation. Afterwards, the pulped coffee is dried in our airflow controlled greenhouse.
This coffee has a full and smooth flavor profile. The first sip brings a lively sweet nougat, followed by the creamy richness of macadamia and a drizzle of honey sweetness and chocolate aftertaste. As it lingers, the cup develops and finishes with a smooth touch of white chocolate.
